Vietnam is the world’s second-largest coffee producer, mostly known for its robusta coffee, which accounts for 95% of total production. The remaining 5% is arabica, which grows in the country’s highlands. A tiny fraction of that 5% deals with speciality quality. The producer of our coffee, Zanya is such a family business, which currently includes four farms covering one and a half hectares. Lim and Marián’s family are also involved in processing, so together with about 35 small farmers living nearby, they process the coffee cherries of more than 25 hectares of plantations yearly. The farms grow arabica varieties such as Catimor, Typica, Bourbon or the Ethiopian landrace and Catimor hybrid, THA1, which significantly increases the cup quality of Zanya coffees. In addition to the black honey process, they also use experimental processing methods, e.g. anaerobic fermentation.
