Yaqueline Hernandez is the founder and organizer of Crecert, an organization, that supports and encourages farmers to produce specialty-grade coffee. Previously, she's been an instructor of cupping and coffee processing at the national coffee educational service. The farm, Los Pinos has been in Yaqueline's family for the last 23 years. It has all the characteristics of a typical finca in Huila: relatively small in size, family-owned, growing several single varieties, meticulous harvest, processing and quality control of their coffees. On the finca, the following varieties are cultivated: Colombia, Castillo, Tabi and Typica. This Typica went through a 24h anaerobic cherry fermentation, then de-pulped and submitted again into anaerobic fermentation tanks, using the juices from the first fermentation. After 48h they are washed and then dried on African beds.
