In Peru, nearly 90,000 hectares of coffee-growing area are certified organic, making the country one of the world’s leading exporters of organic coffee. It is estimated that 25-30% of smallholder farmers in Peru are members of democratically organised cooperatives and associations, which makes it easier to source FTO-certified (Fair Trade Organic) lots. One such cooperative is Lima Coffee in the Cajamarca department, run by Rony Lavan, known for its high-quality microlots. Rony, the head of the cooperative, set out to scale up high-quality production to larger lots. Our current wet-processed regional blend is sourced from smallholder farmers in the surrounding region who farm 2-3 hectares.
