Elver Coronel farms a two-hectare farm in the village of La Flor del Norte, in the Huabal district of Cajamarca. Elver grows Caturra and Bourbon arabica shrubs and has a processing station where he also processes coffee cherries from neighbouring farmers. Our producer used to trade in ginger and started buying coffee from his savings over the years in the ginger business. He pays well and in advance to the surrounding producers and processes their crops selectively and with great care. Just like in the case of our featured coffee, which after de-pulping, due to the local cool microclimate, underwent a relatively longer wet fermentation of 48-72 hours, and was then dried on shaded terraces for 10-14 days.
