Velo de Novia

Velo de Novia is a wet-processed microregion blend made out of the coffee cherries from smallholder farmers living near the municipality of San Jose de Lourdes in the Cajamarca Department of Peru. The work of our producers is brought together by Cooperativa Agraria Norcafe Peru.
Peru has all the potential for producing high-quality specialty coffee, but in most cases, cooperatives still produce low-priced, bulk lots with no traceability, giving no chance to an outstanding small lot to shine through. The aim of our importer is to find smaller producer groups where selective processing and traceability can be solved, either to a single farmer or a smaller group. The small producers of Velo de Novia farm at an altitude of 1,800-2,000 metres above sea level and grow mainly Caturra and Bourbon varietals and process their coffee themselves. The wet process begins with 15-45 hours of fermentation, followed by 12-25 days of drying, depending on the weather conditions.
