Don Victor is a second-generation coffee grower who lives with his family on his farm called La Cedrela near the town of Plandanas in the Department of Tolima. The farm’s micro-region is famous for its rich soil and high-quality coffee. The region’s secret probably lies in the nearly 60 years of armed conflict, during which time no farming was carried out in the area, allowing nature to regenerate. The five-hectare finca has been owned by the family for 40 years and is now home to many exotic special Arabica varieties. Our current coffee is made from a selective harvest of the Tabi variety. After being hand-harvested, the ripe cherries were sorted by floating and then placed in sealed plastic tanks, where they underwent eight hours of anaerobic fermentation. After this, the cherries were de-pulped followed by a twelve-hour oxidation process and a final washing and drying.
