Don Victor is a second generation coffee grower from Planadas, Tolima. It is an area known for the richness of its soils and the high quality of its coffees. This is because the soils were not exploited during the armed conflict for around 60 years. Finca la Cedrela is a 5 hectares farm has been in his family for almost 40 years now where they have dedicated a lot of effort to grow 4/5 high quality varieties looking for outstading washed coees. Thanks to the quality of the coffees, Victor has had the opportunity to move around the country promoting the coffees from his farm and his village, which has allowed him to open good sales channels. Only ripe cherries are picked. A floaters process is carried out before the benefit process. Then the cherries are put through an anaerobic fermentation for 8 hours in plastic tanks. Afterwards the coffee is depulped and starts an oxidation process for 12 hours. Finally it is washed and mechanically dried for 48 hours at 45ºC until reaching 10,5%.
