The plantation of Ademilson Noiman Borges is located near the municipality of São Gonçalo do Sapucaí in the region of Sul de Minas. His farm named Sítio Grota Fria lies at an altitude of 1,070 metres above sea level. Ademilson’s coffee is a selectively hand-harvested Topázio varietal. The ripe cherries are spread out on patios and dried under the sun for about 17 days.

The family of Ademilson Noiman Borges has been involved in coffee growing since the early 1900s. In 1988, Ademilson's grandfather divided his estate among his children, that's when the farm named Sítio Grota Fria was established where the first coffee seedlings were planted in 1996. Ademilson inherited the farm in 2007 and started to replant it with varieties such as Topázio. With the help of the cooperative called Associação dos Produtores do Alto da Serra (APAS), he was able to attend lectures to improve his crop and reach speciality standards. Nowadays, Ademilson also works in the QA team of APAS. More about Topázio: a hybrid arabica varietal developed in the 1960s by the Agronomic Institute of Campinas (IAC), created by crossing Mundo Novo and Red Catuai.
