Frinsa Estate is located in the Pengalengan district of Western Java. It is run by Wildan Mustofa, his wife Atieq and their son Fikri, who came on board full-time after finishing his university studies and is deeply involved in coffee processing. Today, Frinsa Estate spans six plantations, each with its own processing plant and warehouse, giving it complete control from cultivation through processing and sorting. With our current lot, the cherries are washed and floaters removed. They are then fermented with Lactobacillus in a tank for two to three days. After fermentation, the cherries are pulped, and the parchment with mucilage is dried on a covered tarpaulin for two to three days. Finally, the parchment is dried on tarpaulins in the drying yard for seven to ten days.
