Jairo Torres established El Mirador in 2004, which was later joined by his son Andres. The whole family takes part in the work on the farm, Andres' wife cooks for the workers, while his brothers take care of the day-to-day tasks of the farm. Jairo focuses on processing and other post-harvest work. Outside the harvest season, four people help the family, and during the harvest, roughly twenty people work on the farm.
