Herly Mego grows Gesha exclusively on his one and a half hectare plantation, Finca El Mirador. Thanks to its altitude of 1950 metres above sea level, the finca has a cool temperature and a steady air flow, which helps slow cherry maturation. The farm, founded in 2020, will soon be expanded with another 2 hectares, which will also be dedicated to the Gesha variety. El Mirador's processing methods are characterized by precision and restraint. Immediately after harvest, the cherries are spread on three-tier drying beds located at the highest point of the plantation, where they dry for 20-25 days with a slow air flow. The processing is a completely natural, free from interventions, resulting in a structured and clean cup profile.
