Javier Cardozo has been working with coffee for almost 50 years, which tradition is carried on by his son, Arvey. Señor Cardozo lives on the farm, La Cabaña near the municipality of Garzón in the Department of Huila, where he grows Castillo and Colombia Arabica varieties. Javier processes the coffee using the locally common wet process. After 36 hours of fermentation, he dries the coffee on raised beds protected by a foil tent (or as the locals call it Marquesina). Castillo and Colombia are underrated varieties compared to Caturra, but Javier's coffee, with its elegant acidity, is an exception to the rule.
