The Coopro Naranjo cooperative is located in the Western Valley region of Costa Rica, near Naranjo de Alaluja. The cooperative has been operating for over 50 years, processing the coffee cherries of about 2,000 smallholders in the surrounding mountains year by year. Our featured coffee is a smallholder blend of local arabica varieties* processed under the supervision of Hungarian origin Bányai Specialty Coffee Concept. The processing started on the day of picking with a cleaning wash, then coffee cherries were soaked in a water bath inoculated with laboratory-selected terroir wild yeast collected in the mountains of Lourdes, followed by fermentation in 800-litre food-grade tanks. After the 60-hour anaerobic fermentation, the cherries were spread out on patios to pre-dry and were finished drying on raised beds.
