The Rivera family has been growing coffee since 1926 near the municipality of Elías in the Department of Huila. The family was one of the first in their region to join the federation of coffee growers and today, in addition to growing coffee, they are also active in the agricultural education of future generations. Our current coffee is a selectively harvested Pink Bourbon arabica variety from the Riveras' plantation, Las Brisas. After harvesting, the cherries are fermented for 96 hours in an anaerobic environment, and after depulping, the beans, which are still covered with slimy mucilage, are fermented for another 48 hours. This is followed by a 12-day drying process, after which the moisture content of the coffee is stabilized for 1 month.
